The ultimate galette

I hope that this post makes you look into making a galette this summer. Actually scratch that, not this summer. Any time! Swap out the fruit! In summer use peaches, blueberries, or strawberries. In Fall and Winter, go for apples, persimmons, or cranberries. In Spring, do the damn thing with apricots, kumquats, or cherries. Don’t be afraid of butter, a flaky pastry never hurt no one. It comes out crisp, crunchy and jammy.

I typically use this recipe by Susan Spungen and omit the almonds (mainly because I don’t usually have them on hand) I’d also highly recommend subscribing to her substack, it is flawless.
